Born in Westmeadows, Melbourne, in 1975, Shannon first realised his passion for cooking after an impromptu trip to Penleigh Essendon all-girls Grammar School where he studied home economics foran afternoon. His dreams to become a chef were soon cemented by trips to Europe where his Uncle Tom, a chef based in London, introduced him to the sophisticated world of restaurants.
Before moving to Europe and working with the likes of , John Burton-Race, Marco Pierre White and Alain Ducasse, Shannon trained at Melbourne’s Grand Hyatt under the tutelage of Roger Lienhard.
Following his adventures north of the equator, Shannon returned home to Melbourne in 2000 and at just 24 opened his first restaurant, Vue de Monde.
Since, Shannon has opened several additional restaurant concepts, including Bistro Vue and a collection of Café Vues, one of which is located in Melbourne International Airport.
Since its relocation, Shannon’s flagship Vue de Monde is situated on the top floor of Melbourne’s iconic Rialto building, offering guests 360 degree views of the city scape.
