Joachim Wissler is among Germany’s top chefs and is admired for his development of ‘New German Cuisine.’ He serves a blend of classical cuisine, creativity and modernity while pushing the frontier for new (and forgotten) ingredients, techniques and flavours.
Having completed his apprenticeship in the hotel kitchen of theTraube Tonbachin the early 80s, Joachim embarked on his fruitful career. He worked in restaurants throughout Germany, notably at the famous hotel-restaurants at Baden-Baden and as head chef of the thenMarcobrunnrestaurant at Schloss Reinhartshausen in Etville. In 1995 he won his first Michelin star with a second the year after.
However, Chef Wissler’s true success was atVendôme, where he has collected three Michelin stars between 2001 and 2005 and led the restaurant into being a permanent feature in the World’s 50 Best.
His cuisine celebrates German flavours and traditional dishes, peppering them with a few international savours and modern techniques. Inspired by life in Germany, his food often follows nature and seasonal ingredients.
