Makes 1 roll
Ingredients
½ sheet Nori (dried seaweed sheet)
1 crab stick
3 slices of avocados, 5mm thick
5g Tobiko (flying fish caviar)
Green nori flakes to taste
Vinegared rice to taste
Method
Place the nori on a bamboo mat and spread the vinegared rice over the whole surface of the nori. Place some Clingfilm on the bamboo mat and flip the nori onto it so that it is facing upwards. Place the crab stick and avocado slices in a line along the top of the nori and roll the mat away from you. Make sure the shape of the roll is firm and peel the Clingfilm off. Sprinkle with tobiko and green nori flakes, and cut into bite-sized pieces.
Top tip: Try with crab meat and thinly slice onion and mayonnaise.

Ingredients
1tbsp oil
150g fillet of beef
Flour as required
¼ carrot, sliced
1 slice of pumpkin
1 shiitake mushroom
3 pieces of cibol, sliced into 5cm pieces
Watercress as required
Marinade
Soy sauce
Mirin
Sake
Method
Fry all the vegetables except the watercress, in oil. Flour the fillet lightly. Add the oil to a heated frying pan and fry the meat on a high heat. Fry until one side of the meat is golden brown, turn it over and lower the heat. When blood is visible, add the marinade (45cc, with a one part ratio). Now add the fried vegetables to the frying pan, arrange of a plate and garnish with watercress.

Hakutsuru Excellent Sake “Tanrei Junmai”
Serves 4
Ingredients
4 chicken thighs
6 asparagus
Salad oil
Sauce
½ tbsp. soy sauce
1 ½ tbsp. sake
2 tbsp. Mirin
1 tsp. sugar
2 pinches salt
Method
Remove the fat and the sinew from the chicken thighs and mix the sauce ingredients together. Heat and oil a frying pan, frying the chicken thighs, skin side first. Fry on a high heat until they are brown, then turn to a medium heat to cook thoroughly. Pour in the sauce and place a lid on the pan. Cook well and keep basting the chicken.
Cut the asparagus in 5cm pieces and fry in a lightly oiled pan, pouring 1 tablespoon of sake and a pinch of salt. Put a lid on the pan and shake it for 1-2 minutes.
Cut the chicken into thin slices and add the asparagus.
