Peru-born Pía Leon is one half of the mastermind behind the illustrious Central Restaurante, LIMA Fitzrovia and LIMA Floral; the other half being partner, . Pioneering the Peruvian cuisine movement as head chef of LIMA and researcher of Peruvian and Andean ingredients, León is key to the driving force behind the internationally awarded restaurants. Chef León thrives off chasing the perfect ingredients for her cuisine; her passion is not only reflected through her restaurants, but also through Mater Iniciativa – a group dedicated to learning, documenting and using well sourced and traditional Peruvian and Andean products in gastronomy.
Having embarked on her gastronomic career in various international restaurants, including Spain’s El Celler de Can Roca, Pía opened Central Restaurante in 2009 with partner Virgilio, which was deemed 50 in the World’s 50 Best Restaurants in 2013, and the best restaurant in Latin Americain 2014. As head chef of LIMA, Pía now leads the research and concept development of the restaurant’s menu, and has earned international acclaim for her irrevocable culinary technique, genius flavour combinations and passionate ingredient sourcing. After only a year of opening, LIMA was awarded its first Michelin Star in 2013.
