Pioneering the world of French chef-patisserie, Philippe Conticini aims to give a sense of French childhood nostalgia through his signature pastries, including mille-feuilles, Saint Honorés and Paris-Brests. La Patisserie des Rêves is the brainchild of chef Conticini and hotelier Thierry Teyssier. With four shops filled with France’s infamous sweet delicacies, a London branch of La Patisserie des Rêves is opening in February 2014.
Chef Conticini has been perfecting his culinary art since 1983 when he started working as a pastry assistant at Jacques Chibois’ double Michelin-starred Grey d’Albion. His experience has taken him through some of the best kitchens in France, the US and Japan, expanding his worldwide notoriety.
As the inventor of the verrine desserts, Philippe has evolved the taste experience of sweet gastronomy and is now at the forefront of international cuisine and food writing.
