Serves 4
Ingredients
Salmon
100g long sliced smoked salmon. Reserve for later.
Crab mix
100g fresh picked white crab meat
1 granny smith apple finely chopped
20g fennel finely chopped
1 tbspchopped chives
Salt
Lemon juice
Brown Crab meat
50g brown crab meat
5 drops tabasco
Freshly ground black pepper
Lemon juice
Avocado puree
100g Hellman’s mayo
100g crème fraiche
30ml lime juice
2 RIPE hass avocados
10g wasabi paste. You will need less if using fresh wasabi or horseradish.
Garnish
Finely sliced fennel
Sliced apple
Lemon if required
Method
Crab mix
Check the white crab meat for shell, remove any that you find. Mix all the ingredients together, season with lemon juice and salt to taste. Reserve for later.
Brown Crab meat
Place all ingredients into a food processor, blend until smooth. Season to taste.
Reserve until later.
Avocado puree
Place all ingredients into the blender and blend until smooth. Check seasoning add salt & lemon juice if required.
To Finish
Divide the salmon across the plates, top with the salmon mix. Garnish with avocado puree, brown crab meat, apple and fennel. Use the picture as a guide. Serve with a bit of toasted granary bread.
