Pedro Miguel Schiaffino is the chef and owner of restaurant Malabar in Lima, Peru. He prides himself for the research he dedicates to sourcing and implementing never-before-used Peruvian Amazon ingredients in his haute cuisine.
Trained at the Culinary Institute of America (CIA ), New York, and the Italian Culinary Institute for Foreigners ( ICIF ) and Castiglioni d’ Asti, Piemonte, Pedro worked in several Italian restaurants before returning to Peru, working under some of the world’s most celebrated chefs such as Nadia Santini at Dal Pescatore and Piero Bertinotti at The Pinocchio whom Pedro considers a major influence on his style of cooking.
Pedro opened restaurant Malabar in Lima, Peru in 2004. Since its opening, restaurant Malabar has been listed as one of the best restaurants in the world, according to San Pellegrino’s World’s 50 Best Restaurants list. Most recently it was named No.7 in the very first edition of San Pellegrino’s Latin America’s 50 Best Restaurants list, alongside celebrated chefs Alex Atala, Helena Rizzo and Mikel Alonso.
