Belgium-born chef Geert Van Hecke learned his trade in various restaurants, working under the tutelage of some of the world’s best chefs, including famous French chef, Alain Chapel, Alain Ducasse and Michel Roux.
His cooking philosophy is to always use the highest quality produce. In 1983 he opened restaurantDe Karmelietin Bruges and by 1985, fuelled by this simple cooking philosophy, he received his first Michelin star.
In 1989, the Michelin Guide for Belgium and Luxembourg awarded him and his restaurant a second star and, after its relocation, a third in 1996.
Following the success of restaurantDe Karmeliet,Geert and his son opened a more low-key restaurant in Bruges calledBistro The Refectory,along with a hotel, also located in Bruges, called Bonrepo.
