Lucho Martinez at One&Only Palmilla
One&Only Palmilla, the ultra-luxury retreat located on the edge of Baja Peninsula, will host a series of culinary pop-ups helmed by one of Mexico City’s most acclaimed cooking sensations, Chef Lucho Martínez of Em Restaurant, as he brings his innovative cooking to the shores of Los Cabos. Renowned for his inventive twists on familiar farm-to-table dishes, guests are invited to join Chef Lucho as he transforms the resort’s intimate Herb Garden into a buzzing dining adventure during select dates in November, December 2021 and February 2022. Featuring a six-course seasonal omakase journey, Chef Lucho’s interpretation of product-driven, seasonal cuisine highlights the best of products from the Baja region inspired by a range of international influences.
Guests can sample a trio of appetizers including Escamole Croquettes with Oaxaca cheese, hoja santa emulsion, and coriander blossom. Second course includes dishes like Flatbread with kale Caesar salad, uni, and salsa macha, followed by mains of Catch of the Day with black garlic, garlic foam, and caviar. A pre-dessert palate cleanser features shiso leaf, mint, cured cucumber and yuzu before guests dive into a duo of desserts – Mamey Tart served with pixtle ice cream, pine nuts and vanilla oil, alongside Chocolate fudge, sake, cacao nibs. A selection of Japanese-Mexican fusion cocktails like the Nigori Sour made with Tamazakura Sake and strawberry shrub or the Fresh Cucumber made with Hendrick’s Gin, Lillet Blanc and shrub pepino complete the immersive dining experience, as well as a curated menu of Biodynamic Mexican wines.
Originally from Coatzacoalcos, Veracruz, Chef Lucho Martínez spent part of his childhood and adolescence in Nashville, Tennessee. At the young age of 14, he ventured into his first formal job in the kitchen. Some years later, having relocated to Mexico City where he found himself on internationally acclaimed chef Jorge Vallejo’s team at the acclaimed Quintonil, an emblem of the Mexican gastronomical scene and rated one of the best restaurants in the world. He continued his culinary journey at Maximo Bistrot with Chef Eduardo García, who has been revolutionary in crafting dishes with a wide range of techniques, while also honoring Mexico’s most treasured ingredients.
Kicking off November 12-13, the resort’s al fresco Herb Garden will be transformed into an urban tropical paradise, complete with a curated soundtrack by Chef Lucho himself, as the sun sets over the spectacular natural landscape and palm tree-lined skies. Seating is available for dinner only and additional dates guests can experience this exclusive pop-up include:

February 2022: 4-5, 11-12, 18-19 and 25-26

Botanica with Matthew Kenney at One&Only Reethi Rah
One&Only Reethi Rah in Maldives has launched ‘Botanica with Matthew Kenney’ in partnership with the globally celebrated chef, renowned for being a pioneer in plant-based, sustainable cuisine. The innovative experience will showcase a mouth-watering selection of fresh, inventive and sophisticated dishes inspired by the natural simplicity and appreciation of the ingredients, crafted together with Kenney’s creative and modern culinary flair.
As one of One&Only Reethi Rah’s seven diverse dining outlets, Botanica boasts an abundant vegetable and herb garden in a blissful environment that embodies the natural beauty of the island and offers the perfect stage for Chef Kenney’s menu. Complementing the restaurant’s garden-to-table concept, the new menu will feature natural and local ingredients at their peak, such as king oyster mushrooms, summer squash, and banana flowers. Whether dining in the idyllic al fresco potager or surrounded by the colourful entourage of the Orchid House, Chef Kenney’s fresh flavours pair perfectly with Botanica’s Gin Bar which offers a selection of 34 gins from around the world.
Chef Kenney hails from the United States and since being named one of the country’s best new chefs by Food and Wine magazine in 1994 has garnered many accolades and accomplishments, including authoring twelve cookbooks and founding the world’s first classically structured raw-food culinary academy; the Food Future Institute.
Mauro Colagreco at One&Only Royal Mirage
Dubai’s One&Only Royal Mirage reopened with an astonishing revamp of the acclaimed Beach Bar and Grill with Mauro Colagreco, one of France’s leading culinary talents. Mauro will be introducing inspired new concepts and menus incorporating influences from his diverse heritage and rich experience for guests to enjoy. Anne-Sophie Pic at Prime, One&Only Le Saint Géran
From February 2022, One&Only Le Saint Géran in Mauritius will host an exciting culinary pop-up with world-renowned Michelin-starred chef Anne-Sophie Pic at its iconic restaurant, Prime. The renowned three-Michelin-starred chef will be bringing the full-flavoured Anne-Sophie Pic experience to Mauritius. Pic is the fourth generation of chefs in the Pic family, since the opening of l’Auberge du pin in the south of France by her great-grandmother Sophie in 1889. 2018 marked the 40-year celebration of 3 Michelin stars at Maison Pic, a great honour for the chef who is not the third culinary master in her family to earn 3 stars, after André her grandfather and Jacques her father.
