Michelin star French chef, Stéphane Carbone, is usually known for his fine French fare at restaurant L’incognito in Normandy. However this July, Carbone will be upping sticks and heading East to regale guests at the Mandarin Oriental, Macau.
Having previously been chef of choice to cook for President Sarkozy and United States President, Barack Obama, during the 65th D-Day anniversary, Chef Carbone is known for his creative interpretation of classic French cuisine.
Dishes to feature on his sensational tasting menus will include pistachio crusted foie gras, Morello cherry jelly and beetroot ice cream, roasted sea bass with wasabi-potato foam and a chorizo emulsion, French meringue sphere with a caramel mousse and apple chips, to name but a few. These elegant dishes available at Vida Rica will showcase Stephane’s playful approach to fine French dining and aims to takes guests on a sensory journey during the courses.
With a seamless sense of balance within his cooking, Chef Carbone earned his second Michelin star within a year of opening his fine dining establishment L’incognito. The restaurant focuses on high quality, original and refined cuisine and offers simple dishes that are cooked to perfection.
