Unbeknown to many, world-renowned chef Alex Atala began his working life as a punk DJ before pursuing a career in the culinary arts. Now, both chef and keen explorer of the ingredients of his native land, Brazil, Alex has quickly gained a reputation as one of the world’s most influential chefs and one who continues to redefine Brazilian cuisine, one extraordinary dish at a time.
Opening his first restaurant, D.O.M, inSão Pauloin 1999, Alex was one of the first to use indigenous and exotic produce sourced in the Amazon forest in a fine dining setting.
Since, Alex has gone on to dedicate his culinary life to exploring Brazilian ingredients and finding sustainable solutions to sourcing them, both at his restaurant and on paper, including publishing reference-cum-recipe bookD.O.M – Rediscovering Brazilian Ingredientswhich gives readers an insight to his unique relationship with Brazilian produce and the food he creates with it.
His next venture is to be with Alain Ducasse – illustrious Michelin starred French chef – in 2014. They plan to open a new restaurant in Rio de Janeiro and, although the details have not yet been divulged, it is anticipated to be a Michelin starred-extravaganza.
