Trained by and Alain Ducasse, and formerly assistant to Jean-Louis Nomicos at the Lasserre restaurant in Paris, Donckele came toLa Vague d’or in 2005with solid experience, the taste for rigour and a huge passion for local produce and small producers.He has recently earned his third Michelin star in the2013 Michelin Red Guide for France,recognition he hasreceivedfor the knowledge and identity, which he has put into his Mediterranean menu, as well as for the exquisite cohesion he has developed between his brigade of 21 cooks and bakers in the kitchen at La Vague d’or.
