The exceptional Spanish chef Beatriz Sotelo, born in 1981, has headed the kitchen at restaurant A Estación
in Cambre in the Galician province of La Coruña for more than six years. Beatriz was awarded a Michelin star and the title of Spanish Chef in 2008 (Concurso Cocinero del año 2008) and is one of the youngest and most renowned chefs of the Spanish and Galician cuisine. Beatriz conjures fascinating culinary compositions by working with regional and seasonal products, featuring plenty of fresh fish and seafood, characteristics of the distinctive Galician cuisine.
Typical dishes served at A Estación include: Finisterre razor fish with citrus fruits; Jack fish with a blended pepper and vinegar sauce, spinach and strawberries; Fish of the day with cockle rice, goose barnacles and basil in cannelloni of Galician Piñeira hen, wild mushroom, the famous San Simon da Costa cheese and truffle flavoured juice from the roast.
