From a very early age, Diethard Urbansky wanted to be a chef. At the age of 18 he started his training at Hotel Starke in Brilon, Germany. Ten years and seven destinations later he ended up in the renowned Tantris in Munich working with Heinz Winkler for two years. Another two years later he finally started as Chef de Cuisine at the Hilton Grill Restaurant in the Hilton Munich Park Hotel, where he earned his very first Michelin Star. His next stop was the Käferschenke, also located in Munich, before he started working for Dallmayr in 2001. “I was keen to breathe potential star air again,”he says. “And Dallmayr is very well known for its continuity and creativity.”
In 2005 Urbansky was part of developing a new restaurant concept at Dallmayr and after a short renovation the restaurant reopened with Urbansky as its first head chef. In the new restaurant he was able to express his own classic-modern style. The concept seemed to be working because in the year after the restaurant reopened, it was awarded its second Michelin star.
Today he is responsible for eight chefs, cooking for a maximum of 40 guests with the utmost accuracy and perfection to guarantee unrivalled freshness and surpassing quality.
