Jean-Georges has made culinary history and developed areputation as remarkable as his food by tapping his deepunderstanding of the restaurant world and pairing it withhis forward-thinking vision. Yet, after years of success, Jean-Georges’ favourite retreat is still the kitchen, and his favouritemeals dished from a street cart in Thailand.
Though Jean-Georges Vongerichten is one of the world’s mostfamous chefs, his skills extend far beyond the kitchen. A savvybusinessman and restaurateur, Jean-Georges is responsible forthe operation and success of a constellation of three and four-star restaurants worldwide.
Born and raised on the outskirts of Strasbourg in Alsace,France, Jean-Georges’ earliest family memories are of food.He began his training in a work-study program at Aubergede l’Ill as an apprentice to Chef Paul Haeberlin, then went onto work under Paul Bocuse and Master Chef Louis Outhierat L’Oasis in southern France. With this impressive 3-Michelin-star background, Jean-Georges travelled to Asia andcontinued his training at the Oriental Hotel in Bangkok, theMeridien Hotel in Singapore and the Mandarin Hotel inHong Kong.
It was during this time spent working and travelling throughoutAsia that Jean-Georges developed his love for the exotic andaromatic flavours of the East. His signature cuisine abandonsthe traditional use of meat stocks and creams, and insteadfeatures the intense flavours and textures from vegetable juices,fruit essences, light broths, and herbal vinaigrettes. Jean-Georges’ culinary vision has redefined industry standards andrevolutionised the way we eat.
Jean-Georges is involved in every aspect of his restaurants– concept, menu, architectural design, staff selection andtrainings – in an ongoing effort to create restaurants thatare both timely and enduring. Inspired by his travels, Jean-Georges is constantly developing fresh concepts and evolvingas a chef and restaurateur, both adapting to and impactingthe global culinary landscape.
Recently, Jean-Georges has opened a number of newrestaurants including The Mark Restaurant by Jean-Georges,located inside The Mark Hotel, ABC Kitchen and ABCCocina, Simply Chicken at Madison Square Garden, ThePump Room in The Public Chicago and Eden Rock in St.Barths. ABC Kitchen was awarded Best New Restaurant of2011 by the James Beard Foundation.
