Copenhagen-based, Chef Patron René Redzepi’s current illustrious status was not written in the stars. Specialising in new-wave Nordic food, his restaurant, Noma has gained its 2 Michelin stars through sheer determination, hard work and an inventive approach to its cooking and strict local sourcing and foraging. His food can be slightly visceral, aiming to reflect the Danish landscape and culture, as well as creative and surprising.
Some may say René’s modest culinary philosophy and merciless work ethic at Noma stems from his modest and humble background, where he had to contribute to family finances from a young age. On leaving Hotel and Restaurant school, Redzepi completed an apprenticeship at Pierre-André, one of Copenhagen’s few Michelin restaurants, followed by Montpelier’s three-star Jardin des Sens, Barcelona’s ElBulli and Kong Hans.
At age 25 in 2002 Chef Redzepi was offered chief position at what would become Noma. Since, the restaurant has received two Michelin stars in 2008, making it hot topic in international circles. Subsequently it was judged ‘San Pellegrino’s Word’s Best Restaurant of the Year’ in 2010, and Redzepi became flavour of the last few years, gracing top positions without fail.
