Ingredients
1150g bonito
575g butter
8g salt
15g coriander seeds
8g ground coriander
15g tarragon
5g spring onions
3g chives
2g baby radish
1g rucola
3g pickled fennel
4g bread crisp
Method
Fillet the bonitos. Boil the bonito fillets, bones and coriander seeds. After deboning the fillets add the butter melted in room temperature. Add salt, coriander, chopped tarragon and mix well.
