Ingredients
1⁄2 – 1 tbspmilk
5g yeast
1⁄2 tsp sugar
75g flour
25g cocoa
10g sugar
1⁄2 tsp salt
50g butter, room temp
1 egg
Chocolate balls (eg, Lindor)
Chocolate mousse
200g chocolate (dark chocolate)
3 egg yolks
60g sugar
3 egg whites
1 pinch of salt
5 dl cream
Schokotouille
65g of orange juice
25g glucose
25g desiccated coconut
100g butter
250g sugar
30g flour
30g cocoa powder
Method
Warm the milk, yeast and sugar andstir gently.Make a pre-fermented dough with the remaining ingredients and knead.Divide the dough into balls and allow approximately 1 hour to cool.Warm up the chocolate ball and flatten with the dough until it is mixed in. 5. Again, allow to cool briefly, then fry the balls until golden brown in hot fat.Preheat the oven to 180 ° C.Place the balls top and bottom for5 minutes.To serve, sprinkle with powdered sugar.
Chocolate Mousse
Place the chocolate in a bowl and melt over a water bath.Add the egg yolks and sugar until creamy then cool slightly. Stiffly beat the egg whites, add a pinch of salt and half the whipped cream into the mixture.Refrigerate the chocolate mousse for 2 hours then serve.
Schokotouille
Add orange juice, glucose, coconut and butter to the pan.Add sugar, flour and cocoa andstir everything well. Allow the mixture to cool.
