What’s the most scientific piece of equipment in your kitchen?
I tend to use traditional methods of cooking so my kitchen is not hugely scientific in approach. The most scientific piece of equipment would probably be a sous-vide and a vacuum packer, both of which are pretty straight forward. I try to keep my food up to date with flavours rather than equipment. (0)
Are you passionate about liquid nitrogen?
I’m not the slightest bit passionate about liquid nitrogen! It may be something to look into in the future but currently it doesn’t feature in my kitchen. (-0.5 for ‘not in the slightest!’)
Could you describe your cooking style for us?
My cooking style is full of life, heart and soul as its something I’m truly passionate about. I aim to create exciting plates of food that bring people together and opens them up. I want to enliven and excite while still being comforting. (0)
What’s your favourite meal to make at home?
My favourite food to make at home is anything that makes my family happy! They’ll try anything and I use cooking as an excuse to bring them together as they are still so appreciative and happy when were are. But I do love a Sunday roast!! (0.5 – because we love a Sunday roast too Andi!)
What’s the most scientific piece of equipment in your kitchen?
There are standard equipment such as a Julabo for water baths and sous vide cooking, Pacojet, Thermomix. (2)

We concentrate on the essential, and theclear production of the main components, paired with exciting flavor combinations.We also have a specialfour-course, purely vegan menu. (0.5 – minimal and vegan is almost avant-garde)
What’s your favourite meal to make at home?
Always how I just feel like. I let myself be inspired by the season and market supply, generally very much with vegetables. (0)
