Botanist to Host ‘Michelin on the Road’ Collaboration In Vancouver

Looking for your next fine dining fix? Fairmont Pacific Rim’s Botanist in Canada is known for its exceptional culinary events, inviting Michelin-starred chefs into its kitchen for one-off nights. The dining establishment recently partnered with Singaporean venues earlier this year, and Chicago will be next.

Botanist’s executive chef Hector Laguna will be welcoming American chef and restaurateur Ryan McCaskey to Vancouver next month for a collaborative dinner. With a tempting seven-course menu, the culinary night is taking place as part of the Michelin on the Road dinner series. An exciting initiative, the series aims to showcase some of the best chefs collaborating around the world for exclusive meals.

Ryan McCaskey is the owner of Acadia, a two Michelin-star restaurant located in the capital of Illinois. Serving modern American cuisine inspired by his summers spent in Maine, guests can expect a blend of classical cuisine and innovative techniques.

The chefs will team up to showcase their own culinary flair in a seven-course tasting menu on August 9, treating attendees to a blend of West Coast and East Coast flavours in the featured dishes.

A new addition to Canada’s vibrant culinary scene, Botanist is located in the heart of Coal Harbour inside Vancouver’s luxurious Fairmont Pacific Rim. Inspired by the principles of botany, the beautiful venue transports guests into a world where day blurs into night and summer into winter. Executive Chef Hector Laguna’s menu represents the botany of British Columbia and the Pacific Northwest, where locally sourced ingredients are coupled with contemporary techniques.
