The Ritz-Carlton Maldives, Fari Islands continues its prestigious Masters of Crafts series by welcoming one of Switzerland’s most celebrated chefs, Rolf Fliegauf. The founder and Executive Chef of the renowned Ecco restaurants will take over the Beach Shack for 2 special nights, presenting his signature dishes with a Maldivian twist. This exclusive residency is part of the resort’s ongoing collaboration with world-class masters in cuisine, wellness, adventure, and sustainability, designed to offer transformative guest experiences.
With a total of six Michelin stars and 18 Gault Millau points, German-born Rolf Fliegauf, once Europe’s youngest 2-Michelin-starred chef, leads both Ecco Ascona and Ecco St. Moritz at Hotel Giardino Ascona and Hotel Giardino Mountain, respectively. For this unique event, Chef Fliegauf will craft an exquisite tasting menu that highlights his ‘purist-aroma’ approach, where each dish retains the true essence of its ingredients, creating a distinctive and memorable culinary journey. The menu will blend his hallmark techniques with local and Asian influences, offering guests a one-of-a-kind fine dining experience.
Among the standout creations Chef Fliegauf will prepare are his famed lobster dish featuring citrus, XO sauce, yuzu, Maldivian lobster, and pumpkin, as well as his pre-dessert masterpiece, Coconut and Caviar, which combines rich coconut flavors with the salty notes of caviar and the earthiness of olive oil. Diners will also indulge in dishes such as yellowfin tuna with jalapeño and finger lime, Hokkaido scallop with quinoa and bacon, and Japanese Wagyu beef with beetroot, crispy buckwheat, and truffle.
Chef Fliegauf will be joined by his talented team from Ecco, including his wife and General Manager, Jennifer Fliegauf, and Junior Sous Chef Sebastian Krawanja. Together, they will collaborate with The Ritz-Carlton Maldives’ newly appointed Executive Chef, Pedro Samper, to create an extraordinary fusion of culinary philosophies.
