Le Comptoir’s two-Michelin-Star restaurant, ÉCRITURE has unveiled a special tasting menu for International Women’s Day – conceived, developed, and executed by the women of Écriture from Front-of-House to the Kitchen. Executive Chef Maxime Gilbert has given full rein to his right-hand protégé and Chef de Cuisine Heloise Fischbach to lead this exclusive menu, available for lunch and dinner on Monday, 8th March only.
The limited-time menu is priced at HK$1,188+10% for the 5-course lunch, and HK$1,888+10% for the 7-course dinner. For dinner, there is a 7-glass wine pairing option for an additional HK$1,290+10% per guest. In the spirit of International Women’s Day, the special menu is a celebration of the hardworking women of F&B – a collaborative creation of exceptional staff at Écriture including Heloise Fischbach (Chef de Cuisine), Alexia Kei (Chef de Partie), Tia Cheung (Chef de Partie), Kristina Delaire (Supervisor), Ng Ka Yan (Guest Relations Officer), Lau Wing Man (Receptionist), Rowena Gonzalez (Receptionist), and Maya (General Maintenance).
Écriture’s Special International Women’s Day Menu on 8th March, 2021
Serving for one day only, the International Woman’s Day 2021 menu begins with a creative appetizer of Topinambour, a root vegetable (otherwise known as Jerusalem Artichoke) with an earthy and nutty flavour. Topinambour is infused with smoked eel and topped with caviar for an exquisite start to the meal. Other highlights of the menu include Butternut Cuttlefish Black Truffle, combining seasonal delicacies of cuttlefish, black truffle and sorrel with homemade Bagna Cauda (anchovy) sauce, and beautiful cuts of the coveted Blanc de Blanc Aveyron Lamb served with sweet potatoes millefeuilles and rooibos red tea.
The desserts for this menu are led by Chef de Partie Tia Cheung, who usually works alongside Cyrus Yan to produce original sweets creations and modern interpretations of classic French desserts. Her extraordinary talent for pastry comes through in new desserts Citrus & Argan Oil and Rice and Honey (for dinner), available to savour only on Écriture’s International Woman’s Day 2021 menu.

About Chef de Cuisine Heloise Fischbach
When French-native Heloise Fischbach left Paris for Hong Kong in 2016, she embarked upon a life-changing new role at two-MICHELIN-starred Écriture as Sous Chef. Working closely alongside Executive Chef Maxime Gilbert, Heloise quickly made her way up the ranks, rising to the role of Chef de Cuisine in only four months in. Prior to joining Écriture, Chef Heloise’s remarkable culinary skills were developed over the years spent at some of the world’s most highly acclaimed restaurants, including three-MICHELIN-starred Mirazur (no.1, The World’s Best Restaurants 2019) in Menton, France, and three-MICHELIN-starred L’Arpege in Paris, France.
About Chef de Partie, Tia Cheung
Creative, passionate, and full of vigor for the art of pastry-making, native Hong Konger Tia Cheung has had a sweet tooth for as long as she can remember. Kicking off her career as a hotel Pastry Commis from the young age of 18, Tia has since worked her way up the pastry world at some of Hong Kong and Macau’s most prestigious restaurants. Tia has honed her skills under luminaries such as Antimo Merone at 1-Michelin-starred 8 ½ Otto e Mezzo Bombana Macau, and most recently, Fabrice Vulin of 2-Michelin-starred The Tasting Room in Macau. She continues to dazzle guests with her extraordinary talent for pastry now at 2-Michelin-starred Écriture, where she works alongside Pastry Chef Cyrus Yan to produce original creations as well as modern interpretations of classic French desserts.
