With the menu and experience designed by Luis “Chele” Gonzalez, the celebrated chef behind a number of Spanish restaurants in the Philippines, guests are in for an authentic Spanish experience with both traditional and modern selection in the menu. Servings meant for sharing based on Chele’s favorite tapas and comfort food completes the traditional menu. Here he curates some of the dishes he enjoyed growing up like Rabas and Chorizo Croqueta.
The modern selection is where Chele managed to incorporate local products such as the region’s popular suckling pig and sweet mangoes in one of Enye’s signature appetizers, Cebu lechon tacos. The local lime, popularly known as calamansi takes center stage in Texturas de calamansi, a citrusy dessert with calamnsi flavor in three varied textures; cake, mousse and ice cream.
The restaurant located at the lobby level of the resort has incredible pool and beach views. Inside, the design reflects a beautifully balanced union of the classic and the contemporary. Although most elements are contemporary, there is a notable harmony between the modern approach to the dining environment and a very subtle “nod to the past.” The modern and contemporary elements are reflected in the interior’s clean lines and innovative lighting fixtures. The eccentric elements and figures express a streak of boldness and eagerness to make a non- conventional statement.
It features a wine cellar with an abundant selection of whites, reds and roses which match perfectly with the menu; a charcuterie room allowing guests to see quality and variety of the cheeses, chorizos and hams that make up the delectable appetizer selection; and a show kitchen allowing guests to enjoy the Enye experience from preparation to table service.
Enye by Chele Gonzalez is located at the lobby level of Crimson Resort & Spa Mactan and open daily for dinner from 6:00pm to 10:30pm.
