Housed within a 17th-century manor house at the 5-star Castlemartyr estate in Ireland, Terre opened its doors earlier this month. Named in homage to the connection between land, people and produce – Terre will be an experience rooted in French cooking brought to life with the bright flavours of Asia whilst drawing upon abundance from the Irish terroir and sea. The dynamic experience will be set over several spaces including a preserving room, dining room, kitchen and salon.
Having worked in some of the world’s most revered kitchens – including 3 Michelin-starred Arzak in San Sebastian, Hotel de Ville Crissier in Switzerland and as Sous Chef for four years at Restaurant André, Singapore – Vincent Crepel’s Terre will use ingredients from the bountiful Irish larder, whilst drawing on his experience in France, the Basque Country and Asia. Dinner will begin with aperitifs overlooking the estate’s landscaped gardens, a tour of the kitchen with champagne and snacks and an intimate look into the dry-ageing fridges and fermentation rooms before sitting down to dine. The wine will be given the same prominence as the food. Specially curated from a list of small-scale, family-owned producers using low-intervention methods to produce biodynamic and organic wines, the restaurant will boast one of the region’s most impressive selections of vintages.
“From the first moment I saw the green fields of Ireland surrounded by its spectacular coastline, I have felt a connection with the land and its people, drawn energy from the sea, and inspiration from its bounty. At Terre, my hope is to bring you on a special journey and to share with you my very personal vision of a modern restaurant experience,” says Vincent.
Set in an 17th-century manor house, surrounded by woodlands and adjacent to the ruins of an 800-year-old-castle, Terre’s design will be a mixture of heritage elements with a twist on modern and pure lines divided into multiple rooms. The colour palette will incorporate dark navy and rich earthy tones to emulate the wilds and waters of the Irish landscape that inspired Vincent when he first arrived in Cork. The furniture has been crafted by Modet in Kinsale, Leeside Forge and Fermoyle Pottery have also created an exclusive collection for use in Terre.
