This summer, Australian foodies are in for a treat as Lake District-based chef Simon Rogan heads Down Under for a five-week residency at Bathers’ Pavilion, Sydney. Taking place from 19 July to 20 August 2023, Simon will bring his world-renowned cuisine to the restaurant located on Balmoral Beach on Sydney’s North Shore, serving some of his most loved dishes with Australian adaptations. This will be the first-ever Australian residency for Rogan and his team, who will strive to encapsulate the L’Enclume experience 10,000 miles from home.
Whilst his restaurants in the UK (L’Enclume, Rogan & Co, Aulis and Henrock) will operate as normal, a team of chefs and front of house – from both his UK and Hong Kong operations – will join Simon in Australia, including Oli Marlow, Executive Chef of Roganic and Aulis London and Hong Kong, as well as Sam Ward, Managing Director of Simon Rogan restaurants worldwide. With Simon on the pass each night, guests will experience an eight-course menu, alongside snacks and petit fours, whilst bespoke crockery will be made especially for the experience.
Simon, whose restaurant L’Enclume achieved its third Michelin star in early 2022 and is now embarking on his 21st year in business said: “The Sydney residency marks a big milestone for us as we enter our third decade and our boundary-pushing team could not be more excited to share our strong sustainability ethos and serve up some of our favourite L’Enclume dishes using the outstanding local ingredients unique to New South Wales and Australia.”
Rogan will adapt some of L’Enclume’s renowned dishes to incorporate local and native ingredients from farms and fisheries located close to Sydney, alongside producers who have the ability to grow specifically for the residency. A comprehensive wine list, including an exclusive cellar list with the option to pre-arrange rare vintages and bottles ahead of time, will be served alongside the menu and curated by a L’Enclume sommelier.
The event comes three years after it was originally planned to take place at Bathers’ Pavilion in the summer of 2020, but was postponed due to the pandemic. Bathers’ Pavilion, which is located on Sydney’s North Shore, brings together 1920s art deco soul with Mediterranean charm and is typically renowned for its Australian coastal dining. L’Enclume and the Bathers’ Pavilion philosophies are closely aligned, as both restaurants pride themselves on celebrating exceptional produce and the natural environment.
